This weekend marked the first weekend of summer, and we had some family over for a BBQ. I decided to throw together this quick mango salsa to spice up some otherwise ordinary chicken burgers. This recipe is quick, delicious, and nutritious.
Recipe (Serves 4-6) :
½ a Red Onion
1 Red Bell Pepper
1 Jalapeno Pepper
¼ Cup Olive Oil
Cilantro (for garnish)
Chop the mangos, red onion, and bell peppers into bite sized pieces and add to a serving bowl. Remove the seeds of the jalapeno pepper and chop very finely before adding to the bowl. Add the olive oil and the juice of one lime before tossing all together. Lastly, garnish with cilantro.
I used this salsa to top chicken burgers, but this would also work well on top of turkey burgers, or served with chips.
