Pizza Night

The summer months are always busy for entertaining family and friends. When a bunch of my family got together for an impromptu pizza night we decided to get a little creative instead of ordering in. Getting everyone involved and cooking together was what made the night even more enjoyable. We made two different gourmet pizzas that were both delicious.

BBQ Chicken Pizza: (serves 4-6)

Ingredients:

  • 1 Cup Rotisserie Chicken (shredded)
  • 2 Multigrain Pizza Crusts (store bought)
  • 1/4 Cup BBQ Sauce 
  • 1/4 Cup Pizza Sauce
  • 1 Onion
  • 1 Cup Cheddar Cheese
  • 1/2 Cup Mushrooms Chopped
  • 1 Tablespoon Chilli Flakes
  • 1 Tablespoon Cilantro
  • 1 Tablespoon Butter

In a saucepan soften 1 thinly sliced onion in 1 tablespoon of butter. When the onion is translucent, turn off the heat and set aside. Spread the pizza sauce over the multigrain crust and sprinkle with chilli flakes. Add the mushrooms, sautéed onions and shredded chicken to the pizza, top with cheese, and drizzle with BBQ sauce. Bake in the oven for 15 mins at 400°F. Sprinkle with cilantro before serving. 

Veggie Pizza: (serves 4-6)

Ingredients:

  • 2 Multigrain Pizza Crusts (store bought)
  • 1/4 Cup Pizza Sauce
  • 1 Cup Red Pepper
  • 1 Cup Mushrooms
  • 1/2 Cup Goat Cheese
  • 1/2 Cup Mozzarella Cheese 
  • 1 Cup Arugula or Mixed Greens
  • 1/4 Cup Olive Oil
  • 1 Teaspoon Lemon Juice

Spread the sauce over the multigrain crust and add the mushrooms and red peppers. Top the pizza with goat cheese and mozzarella cheese before baking in the oven for 15 mins at 400°F. While the pizza is in the oven toss the arugula or mixed greens with the lemon juice and olive oil. Top the pizza with the greens before serving.

We served a sparkling lemonade cocktail to accompany the pizza.

The night ended with sharing lots of laughter and eating S'mores by the fire pit.
