As Kunal and I transition to eating more plant-based I have been scouring the web to find delicious plant-based recipes.
If I am going to have dessert, a good chocolate cake with a super fudgy frosting is one of my all-time favourites. One of the things I find difficult in transitioning to plant-based are desserts, because often times they have things like butter or eggs. It can be hard to bake without these items or find a good dessert without these items. That's why, when I stumbled across this recipe for chocolate cupcakes with fudge frosting that was free of animal products and oil I just about lost it. So not only are these cupcakes vegan, they are also healthy. WIN WIN.
I usually have oatmeal for breakfast, and because these cupcakes are made out of oat flour I have some how justified to myself that I can have these for breakfast every morning from here on out. I think that sounds like a great idea, don't you?

I whipped up a batch this morning, and I was very impressed at how good they were. The frosting is my absolute favourite.
